Description
A spicy, creamy chicken broth base that is rich in flavor and includes delicious ingredients such as gnocchi, bacon, hot Italian sausage, and kale. Serve with a fresh salad and crusty Italian bread; this is a perfect winter meal.

- 5 slices thick applewood bacon
- 1 pound of mild or spicy Italian sausage
- 1 yellow onion, diced
- 2 cloves garlic, finely diced
- 3 celery stalks, chopped
- 6 cups low-sodium chicken broth
- 1 tablespoon Italian seasoning
- Pinch of red pepper flakes
- 6 cups kale (thick stems removed)
- 1 cup heavy whipping cream
- 1/4 cup parmesan cheese
- 24 ounces gnocchi
- Fresh thyme sprigs
Instructions
- Fry bacon until crispy and transfer to a plate while reserving two tablespoons of the bacon grease.
- Add onion and sausage to the bacon grease, and break up the sausage while cooking, browning for 7-8 minutes.
- Add the garlic and celery and cook for 2-3 minutes.
- Stir in the broth and add seasonings, cooking for 10 minutes
- Reduce heat so the broth is at a simmer, and add kale, parmesan cheese, cream, and gnocchi.
- Simmer an additional 5 minutes.
- Garnish each bowl with bacon, parmesan cheese, and thyme.
