Description

A spicy, creamy chicken broth base that is rich in flavor and includes delicious ingredients such as gnocchi, bacon, hot Italian sausage, and kale. Serve with a fresh salad and crusty Italian bread; this is a perfect winter meal.


Ingredients

Scale
  • 5 slices thick applewood bacon
  • 1 pound of mild or spicy Italian sausage
  • 1 yellow onion, diced
  • 2 cloves garlic, finely diced
  • 3 celery stalks, chopped
  • 6 cups low-sodium chicken broth
  • 1 tablespoon Italian seasoning
  • Pinch of red pepper flakes
  • 6 cups kale (thick stems removed)
  • 1 cup heavy whipping cream
  • 1/4 cup parmesan cheese
  • 24 ounces gnocchi
  • Fresh thyme sprigs

 


Instructions

  1. Fry bacon until crispy and transfer to a plate while reserving two tablespoons of the bacon grease.
  2. Add onion and sausage to the bacon grease, and break up the sausage while cooking, browning for 7-8 minutes.
  3. Add the garlic and celery and cook for 2-3 minutes.
  4. Stir in the broth and add seasonings, cooking for 10 minutes
  5. Reduce heat so the broth is at a simmer, and add kale, parmesan cheese, cream, and gnocchi.
  6. Simmer an additional 5 minutes.
  7. Garnish each bowl with bacon, parmesan cheese, and thyme.
