Ingredients

Scale

Donut Pan

Cider Reduction:

1 1/2 cups apple cider

Cake Donut Mixture:

2 cups all-purpose flour

1 teaspoon baking soda

3/4 teaspoon baking powder

1 1/2 teaspoons cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

3 tablespoons unsalted butter (melted)

1/2 cup dark brown sugar

1/2 cup granulated sugar

1/2 cup buttermilk or whole milk

1 egg

1 1/2 teaspoon vanilla

Cinnamon Sanding Sugar:

1 cup granulated sugar

1 1/2 teaspoon cinnamon

1/4 teaspoon cardamon

Melted Butter Bowl:

4 tablespoons butter (melted)

Instructions

  • Preheat oven to 350• F.
  • Apple cider can be reduced on the stovetop by simmering it in a saucepan over low heat until reduced to 1 cup, which can take about 20-25 minutes.
  • In a large bowl, sift together the dry ingredients: flour, baking soda, baking powder, cinnamon, nutmeg, and salt. Set bowl aside.
  • In a separate bowl, whisk melted butter, egg, dark brown sugar, granulated sugar, buttermilk or milk, vanilla, and reduced apple cider. Slowly pour all dry ingredients into the wet ingredients. Mix until incorporated, being careful not to overmix.
  • Pour the donut batter into a resealable plastic bag. Cut a corner of the bottom of the bag (1/2 inch) and pipe into a well-greased donut pan approximately 2/3 of the way in each donut well.
  • Bake for 10-12 minutes.
  • While the donuts are baking, make the cinnamon sanding sugar. Whisk together granulated sugar, cinnamon, and cardamom in a bowl big enough to dredge the donuts.
  • Melt the butter in a bowl of a similar size.
  • Cool the donuts for 5 minutes and remove them from the pan.
  • Dredge one side of the donut in butter and immediately dredge in the cinnamon sanding sugar.
